If cashews were milk I’d have my own cow! I stumbled upon yet another dairy replacement that tastes just like but better than the real thing. It’s even easier than the real thing I’m sure by a long shot. It’s mayonnaise!!

The recipe is pretty much this one just slightly revamped.

mayonnaise
Ingredients
1/2 cup raw cashews
1/2 cup purified water
1/2 small lemon, juiced
3/4 tablespoon agave
1/2 tablespoon apple cider vinegar
1/2 teaspoon sea salt
1/4 teaspoon dry mustard
1/2 tsp onion powder
1/2 tsp lecithin
1/2 cup olive oil

Preparation
Put all the ingredients except the olive oil in a heavy duty blender. Puree the ingredients until very smooth. With blender still in motion, slowly pour a thin stream of olive oil through the opening in your blender cover. Continue to puree until you reach the right consistency. Taste and adjust flavors to your liking.

This makes a whole slew of recipes makable now that I’ve got mayo!! Some I’ll be trying out for high raw life include coleslaw, veggie dip, ranch dressing, and “tuna” salad for sandwiches. Let the YUM begin!

Alright! I’ve been a naughty girl! After my hospital visit I went on a bit of a cooked food spree eating out here and there of course mostly vegan and gluten free, but cooked non the less. Oh, whoa is me. Now I feel sick.

It just didn’t seem fair that I was doing all this raw eating for over two months and still ended up in the hospital. Plus some other things happened that put me in a downward spiral. Not for long though because this is the new and improved me! I’m not gonna let things get me down so badly that it takes me off my path to happiness and well being. I’m gonna pick myself up and start running towards my goals.

Thats me and my sis eating Erma’s famous italian ice. Well, actually they are famous for their custard but we chose the dairy & fat free Italian ice. Watermelon, which tastes just like watermelon bubblegum. Oh my I feel ill. I don’t want to feel like this ever again! Thank goodness tomorrow is another new day...

I never ever like any raw cracker or corn chip recipe. I guess I’m super picky. So I got inspired by these raw hamburger buns at a raw deli we live by and created my very own recipe. Corn chips are back on the menu!

SPICY CORN CHIPS
3 - 4 ears sweet corn, shucked
1/2 c. buckwheat sprouted and dehydrated
1/3 - 1/2 c. golden flax seeds
1/8 - 1/4 tsp. cayenne pepper depending on how spicy you like it
1 1/2 tsp mexican seasoning
1 1/2 tsp sea salt and more for sprinkling on the tops

In a vita mix blender or coffee grinder blend buckwheat & flax seeds into flour.
Add remaining ingredients and blend until smooth.
Spread onto teflex sheets in two inch rounds. Sprinkle with salt.
Dehydrate for at 125 F for two hours and then lower heat to 110 F for another 22 - 26 hours or until crisp flipping chips over when they become firm enough.

I have to share another recipe for easy taco meat! This was soooo yummy!

TACO MEAT IN A HURRY
1 c. raw walnuts
2 TBS frontier taco seasoning
2 - 4 TBS lime juice or more as needed

In a food processor with the s blade grind until it resembles taco meat adding lime juice as needed.

I served mine over a salad of lettuce, cucumber, green onion, avocado, and tomatoes with cashew sour cream and fresh salsa.

Mashed Potatoes And Turkey.... wink wink

As you know I’ve been craving creamy mashed potatoes like crazy. Perhaps it’s stress related... hmmmm. Anyway, my last attempt at them from one of my raw recipe books was awful. They were with jicama. So it took me quite a while to try another faux mashed potatoes recipe. I’m so glad I did!

These are so good and creamy. I didn’t add the garlic or chives since I didn’t have any on hand, but next time I will and I’m going to see how they taste replacing the cashews with my raw sour cream for sour cream & chive mashed potatoes!

So the turkey thing came about a bit weird. I had made a cheese pate recipe that was pretty tasty and decided to turn the rest into cracker rounds by dehydrating it. When I tasted the first one it had a very familiar taste to it I couldn’t put my finger on. After shoving several crackers into Scot’s mouth he said “It’s turkey!” and then I could sleep at night finally knowing what that odd familiar flavor sensation was. Hey, I just might make some up for Thanksgiving with a couple tweaks to it.

The mushrooms are just those Karen Knowler ones I’ve posted about before. Her “fried” mushrooms that are a staple in our house.

I haven’t been posting a ton because we’ve mostly been eating a lot of the same stuff already posted. Although, as soon as we get some more chocolate powder I have a great new recipe to post about! They are round and covered with coconut.

Ever since Apple switched over to apple me tons of bloggers have been having the same issues as we are on high raw life. Apple is working on it though. I do miss all of your comments!! In the meantime I’ll still be posting lots and hopefully soon you’ll be able to comment once again.

SWEET FRESH CORN WITH GUACAMOLE BUTTER
sweet corn cleaned and cut in half
guacamole with the addition of jalapeno finely chopped

Smother corn with guacamole and taste what the true meaning of summer is!

Then for dessert serve up some scrumptious chocolate pudding from Jennifer Cornbleet’s recipe book. I added chocolate extract and replaced the dates with young coconut meat. Scot LOVED it!

That’s what a young coconut looks like. I couldn’t believe that the water inside came out such a beautiful pink! I think it was because it was very very young. It hardly had any flesh on the inside because of it. It’s the most amazing drink in the whole wide world.

Some interesting facts...
Back in the day they ran out of plasma during the war so they used fresh coconut water for transfusions to save soldiers lives. YUP! Coconut water is almost identical to our plasma.

It is highly hydrating! In fact more so than water because it contains all those lovely electrolytes that we need. Forget the toxic sport drinks and give your body something it can really use. Plus it doesn’t take a million years (yeah for reals!) to decompose it’s container like the sports drink bottle : )

For hiking or traveling we like to buy those coconut waters that are in the aseptic cartons. Some of the brands are ONE, VitaCoco, and Zico. Meijer usually carries it in the juice isle and raw snack bars too! So we usually stop there on road trips. Kroger also carries it usually in the refrigerated health food section. Cold or shelf temp it is wonderful especially for a headache!
